BSO'S NEW JAIL KITCHEN REALLY COOKS!
The brand-new county kitchen/warehouse building that serves the Broward Sheriff’s Office jails in Pompano Beach is on line and serving up meals by the thousands. About eight thousand a day, in fact, to inmates at the North Broward Bureau and Joseph V. Conte Detention Facility.
The two-story, 71,703 square foot building includes a state-of-the-art correctional culinary facility on the first floor and a warehouse/commissary on the second. It was built by Contractor Jim Cummings for nearly $8 million and went on line January 29, 2002.
The kitchen, which is staffed by supervised inmate trustees, has six dual rack ovens, which can each cook 300 chickens at one time. It has two gas ranges, six gas griddles and seven 80-gallon steam kettles. There are two blast-chill cook systems that will allow food right out of the oven to be instantly chilled and stored for future meals. Dirty dishes aren’t a problem for the dishwasher, which can handle 6,000 dishes an hour. The kitchen is built with future expansion in mind, and more equipment will be added when the new women’s jail opens next door late this year. The kitchen has the capacity to prepare and serve up to 24,000 meals a day.
Inmate meals were previously prepared at the kitchen at BSO’s North Broward Bureau, which will be closed and converted into a laundry.
The second floor of the new building serves as the agency’s inmate commissary and stores inmate property. It also has 18,541 square feet of warehouse storage.
